1 ½ Tbsp     Olive Oil
½ cup         Carrots, cooked, sliced or chopped
½ cup         Onions, spring or scallions (tops only) - raw, chopped
½ tsp          Garlic Paste - Amore®
2/3 cup        Water
½ tsp          Bouillon, Wylers Instant® - Chicken granules, crushed
3 Tbsp         KetoCal® 3:1 - Nutricia North America
-                  Pinch of coriander (cilantro), finely chopped

Instructions:

  • Heat olive oil in a pan over medium-low heat.  Add the carrots, spring onions, and garlic paste and cook until soft.
  • Add the crushed bouillon to warm water, then combine with the soup base and simmer; do not boil, for about 25 minutes.   
  • Add KetoCal and blend in electric blender until smooth. Do not boil soup once KetoCal has been added.
  • Add coriander to garnish.
