1 Tbsp          Water
1 ½ Tbsp      Olive Oil
3 Tbsp          KetoCal® 3:1 Powder - Nutricia North America
1 tsp             Cornstarch
¼ cup           Cream, 36% - Heavy Whipping Cream
¼ cup           Cheese - Kraft® cheddar (mild, medium, sharp), grated
1 cup            Cauliflower - cooked

Instructions:

  • Preheat oven to 300°F
  • Cut cauliflower into small pieces and add to boiling water.  Cook until cauliflower is soft.  Remove from heat, drain water and set aside. 
  • In a small microwave-safe bowl, combine and mix together the water, oil, KetoCal, cornstarch and cream.  
  • Microwave mixture for 30 seconds.  Stir.  Heat for an additional 10-15 seconds.  Do not boil when KetoCal is in mixture.
  • Gradually stir in ½ the grated cheddar cheese to mixture until it melts.
  • Place cooked cauliflower in an oven-safe dish and cover with the cheese sauce.
  • Sprinkle the remaining grated cheese on top. 
  • Bake in preheated oven for 10 minutes or until the cheese melts. 
  • Season with salt and pepper to taste.
