Cauliflower and Cheese, Modified Atkins Diet

1 ½ Tbsp Olive Oil
3 Tbsp KetoCal® 3:1 Powder - Nutricia North America
1 tsp Cornstarch
¼ cup Cream, 36% - Heavy Whipping Cream
¼ cup Cheese - Kraft® cheddar (mild, medium, sharp), grated
1 cup Cauliflower - cooked
Instructions:
Preheat oven to 300°F
- Cut cauliflower into small pieces and add to boiling water. Cook until cauliflower is soft. Remove from heat, drain water and set aside.
- In a small microwave-safe bowl, combine and mix together the water, oil, KetoCal, cornstarch and cream.
- Microwave mixture for 30 seconds. Stir. Heat for an additional 10-15 seconds. Do not boil when KetoCal is in mixture.
- Gradually stir in ½ the grated cheddar cheese to mixture until it melts.
- Place cooked cauliflower in an oven-safe dish and cover with the cheese sauce.
- Sprinkle the remaining grated cheese on top.
- Bake in preheated oven for 10 minutes or until the cheese melts.
- Season with salt and pepper to taste.
